Chicken:

  • Vegetable oil 50.0 ml
  • Chicken breast 800.0 g

Dressing:

  • Vegetable oil 40.0 ml
  • White Vinegar 60.0 ml

Salad:

  • Mango, peeled, chopped 600.0 g
  • Coriander 100.0 g
  • Red chilli 2.0 x
  • Cucumber, Shredded 500.0 g
  • Shallots, red, finely sliced 100.0 g

To Finish:

  • Limes, quartered
  1. Chicken:

    • Add the oil to the pan and BBQ the chicken until lightly golden and cooked through.
    • Remove from heat and shred.
  2. Dressing:

    • Combine the Knorr Lime Seasoning, vinegar and oil together.
  3. Salad:

    • To make the salad toss the mango, coriander, chilli, cucumber and shallots together.
    • Add the shredded chicken.
  4. To Finish:

    • Place the salad in a small bowl and drizzle with the prepared dressing.
    • Serve with lime quarters.
