Did someone say Korean Tacos? The most populous US state with 40 million residents, California is known for its innovative fusion of Mexican, Asian, Italian and French flavours, using plenty of fresh ingredients grown in the state.

The American Southwest, which includes states like Texas, New Mexico and Arizona, has its own rich culinary traditions that derive from Spanish, Mexican, Native American and Cowboy/Rancher backgrounds. This is a land of big, bold flavours and even bigger portions. The Southwest is known for tex-mex, Texas BBQ and red chilli sauce.

The Deep South generally refers to the belt of states starting from South Carolina in the east to Louisiana in the west. The cuisine of this area is very localized, from strong French inspired Cajun/Creole traditions in Louisiana to heavily African American ‘Soul Food’ influences in South Carolina, Georgia, Alabama, Tennessee and Mississippi.

No discussion of American food can be complete without New York. New York represents the ultimate American experience. Waves of diverse, dense immigration are the fuel for new ideas formed from the natural exchange of ideas. Often the rest of the Northeast is forgotten in the intense glow of NYC, but their influence has been notable - from the lobster rolls of Maine to the working class favorites of Philadelphia.
